Black garlic extract is produced by fermenting garlic under controlled conditions (around 70% humidity and 80°C) for 30–60 days. The fermented slices are then mixed with water or ethanol and extracted at 80°C. The extract is obtained through solid-liquid separation, followed by low-temperature concentration and drying to yield a high-purity black garlic extract. During fermentation, irritant compounds are broken down, generating beneficial active substances such as polyphenols and amino acids—especially S-allylcysteine (SAC), a powerful antioxidant with anti-inflammatory, lipid-lowering, immune-enhancing, and cardiovascular protective effects.
A clear SAC peak can be observed in the chromatogram of our product, and its quality is strictly controlled and ensured by modern instrumentation.

These extracts proved effective in counteracting the harmful effects of a diet rich in fructoseand cholesterol. Significantly lowering blood pressure, heart rate and arterial stiffness, whileincreasing serum nitric oxide (NO)concentrations necessary to maintain vascular integrity.Additionally, black garlic has been shown to have renal protective properties, protecting thekidneys from the damage associated with high blood pressure and vascular stiffness.
